whole wheat corn tortillas
canned black beans
avocado mashed w/ a tiny bit of Himalayan salt (for spread)
salad mix 50/spring mix 50/spinach
basil pesto (for drizzling)
Have all ingredients out buffet style so everyone can serve themselves (less work for you!).
Microwave the corn tortillas before serving.
The black beans and everything else are fine cold (Look at below pictures to see how I assembled! This is a fantastic meal for all!
For toddlers, I recommend mixing up ingredients in a bowl and serving the tortilla on the side. You can break it up and put it in, but it will get soggy and some little ones can be picky, I know!
Important Notes and disclaimer Though my recipe does aim to be completely whole food, the Basil Pesto's first ingredient is olive oil (and thus not a whole food), so it's best to use it sparingly. Also know it's very strong and also salty, so a little goes a long way. If you're sensitive to salt, you might want to forgo the salt in the avocado or forgo the basil pesto (or make your own homemade).
